There used to be a “Girl Scout Cookie Season”, now I feel like I ALWAYS see the booths at the grocery store or someone’s daughter is coming into work to hit everyone up for orders. I’m not ashamed to admit it, but I walk/run past these cookie booths when I see them. Not because I don’t want to support the girls, (even though I failed miserable at being a girl scout and called it quits after a month), but because if I get a hold of one of those cookies I will end up devouring the WHOLE BOX without stopping to take a breath.
I love how they taste, but I dislike how they’re made. I won’t go into details of my disapproval for the Girl Scout cookie, but let’s just say its chalk full of not so great ingredients….this led me on a search of making my own cookies.
I came across a website called Primal Bliss Nutrition. There was a whole blog post on….wait for it….Girl Scout Cookies!!! There I found many versions of homemade and healthy recipes! Here is one of my favorite all time Girl Scout Cookie the Raw Vegan Paleo Samoas!
Raw Vegan Paleo Samoas
Base Cookie:
- 1 cup dried coconut (unsweetened)
- 1 cup raw walnuts
- pinch sea salt
- 2.5 TBS melted coconut oil
- 2 TBS maple syrup
How to:
- Blend dried coconut in food processor for 60 seconds
- Add walnuts, salt and blend into a fine meal
- Blend in melted coconut oil and maple syrup
- After blended roll a spoonful of dough and flatten on wax paper (roughly 12 cookies)
- Put in the freezer to harden
Coconut + Caramel Layer:
- 8 medjool dates
- 1 TBS water
- 2 TBS melted coconut oil
- pinch sea salt
- 1/2 cup dried coconut (unsweetened)
How to:
- Blend dates with water in food processor
- Add coconut oil, and salt and ½ cup dried coconut
- Take cookies from the freezer and pat down a layer of coconut caramel onto each cookie
- Sprinkle each cookie with dried coconut
Chocolate Icing:
- 4 TBS melted coconut oil
- 4 TBS raw cacao powder
- 2 TBS maple syrup
How to:
- In a zip lock bag and combine coconut oil, cacao powder and maple syrup
- Cut of a corner of the bag and pipe the chocolate into strips across the cookies
- If chocolate is too warm it will be really runny, just find the balance between melty and firm to get a nice even strip.
- Store these beauties in the fridge or freezer. They do not harden as much so stick them in the freezer and it will be like enjoying them right from the ice box!
